Anita’s Dark Choc Chickpea Cookies
1 can chic peas
1/2 cup peanut butter
1/3 cup honey
1/2 tsp baking powder
And however much dark organic chocolate you like!
Blend/mash chic peas, add all the other ingredients, mix, divide batter in to cookie sizes on tray, and bake on 170deg until golden!
These do come out a soft cookie, and are sooo yum!

Carly’s Banana Ice Cream

2 firm bananas sliced and put in the freezer. Freeze until solid then in food processor process until creamy. Scraping down sides occasionally

When smooth and creamy … looking like icecream … serve!

2 bananas gives 3 generous serves

jess quinoa salad

Jess’ Quinoa Salad

1/2 cup quinoa
1/4 capsicum red/green, finely diced
1/4 cucumber (lebanese is my preference), finely diced

1/4 spanish onion

I small tin of corn, drained
1 clove of fresh garlic, very finely chopped
2 small chillies, finely chopped
hand full of chopped parsley/corriander or mix of both
juice from half a lemon

Prepare quinoa as per packet directions. My way is 1/2 cup of quinoa rinsed thoroughly. Add double the quantity of water (1 cup). Bring to the boil and then lower the temperature and allow to simmer until all water is evaporated. Just like rice! Takes 10- 15mins.

Chop/prep vegetables, chillies and garlic and herbs while waiting.

Combine all ingredients in a salad bowl and add the juice of half a lemon.
Then toss and serve.

We like to add a teaspoon  of extra hot sambal from the Indonesian grocer too, this household is partial to chillies!

Serve as a side salad or as a meal for lunch.

Alex’s Blueberry Slice
2 bananas
2 cups dessicated coconut
1tspn – 1tbspn cinnamon (I use a lot because it adds great taste)
4 eggs
2 tspns honey (I dont use this due to the fruit and my kids are fine with it)
This one is a great favourite of my kiddies and its good for lunch treats especially when your school is nut free like ours 🙂
Put it all in a blender – blend and pour into slice tin
Place blueberries all lover the top
Bake on 200 deg for about 30 mins

Sarah’s Chicken Pizza
slice a chicken breast in half to create to fillet like pieces, then bash out with a tenderiser to thin out slightly, place on a baking tray BEFORE putting the toppings on (very hard to move afterwards) apply tomato paste or tomato sauce or BBQ or any other kind of sauce to use as a base!! then top with your favourite toppings!! I’ve used shredded ham, shallots, capsicum and pineapple with only a tiny bit of cheese!! then bake at 200 degrees for 20-30 mins!! sometimes longer, depending on how many topping and how thick the chicken is!

Leah’s Chia Pudding
mix 1/4 cup of chia seeds, 1/4 cup of coconut yoghurt and 1 cup almond milk (can use all almond milk or other milk if you like)  in a glass jar. some times I add LSA too.
Shake and leave in fridge over night.
Serve with fruit the next morning … its really nice with mango, lychees or berries.
